Haven't touched tourney mode so I don't kno about that but only playing with one team sounds right. As for kits, the small teams I have played (San Marino, Finland) did not have any unique crest, just a flag. I don't know too much about either of their kits but they seem generic. From the mural pieces I got from San Marino though the jersey design seems to be the same in the game even if it is not exact.
