I found a workaround. You just select Joe Philbin to start, trade Davis for a 7th rounder, click "retire" and then select "create new character" (Joe Philbin returns as a CPU coach of Miami) at which point you can then take Pagano for the Colts or make someone new and then initiate a trade as the Colts to swap the 7th rounder back to the Colts for the 2nd round pick the CPU Colts wouldn't give up before, to match the real life trade.
