I noticed this when I was reviewing the game as well and asked EA. This is what they said:

"Jonas Brodin has been removed for now from the game due to he will be in the AHL or NHL next year and we will have to wait for him to sign his PHPA form or be an NHLPA member when he plays his first game in the NHL.

We remove him and as soon as he does either of those he will be brought back into the game. We didn’t leave him on Farjestads as we had more than enough players to cover the team’s positions. We do a full pass of the rosters prior to shipping the product and he will be returned to the game as soon as we can."

So I guess look for him after the lockout. I hate that rule.
