what happened was when they did the mo cap for her entrance, at the time she wasn't the really crazy chick she turned into so the skipping wasn't something she did. Same for Ryback with some of his entrance and moves, especially "Shell Shock" with the way he picks the man up and doesn't skip. When they saw him do the move it was at a house show before he had even made his tv debut. That's also where they got his outfit from. Keep in mind when they were making this game guys like Ryback and Sandow were just getting started and someone like AJ Lee was just a wrestler and not a main part of the storyline like she developed into.
