I know this is a bit early in the year to be doing this, as most of us live in cold weather climates, but I still BBQ in the Winter. I smoked a Ham on Christmas Day in about 20* cold!
I have about 23 years experience in the restaurant business and I love to cook.

I thought I would share some of that with you guys and would love to read and see pics of some of your ideas.
I'll start by posting My Christmas Ham and what/how I did it.

I got a 10 lb ham and covered it with Honey Mustard, Pork Spice and Brown Sugar and stabbed it with about 2 doz pineapple cubes.
I soaked Applewood chunks in Apple Juice for about 2 hours before adding them to the hot coals. I chopped up 2 lbs of Bacon and spread over the Applewood chunks. My drip pan also had Apple Juice for flavor and basting.
I smoked the ham for about 4 hrs at 225*. I also smoked about 12 pineapple rings for the garnish.
This was by far THEE BEST ham I have ever eaten!
