I started mine 1* OC at New Mexico which was pretty good. They are one of the worst teams in the game but they have just enough talent at RB and a pretty decent QB that you can get away with a lot. I went 13-1 with them first year using a spread attack. Had to fight for every game though!
Akron is a daunting task as well. -
UMass. Decent QB and that's it.

Tulane. Great QB to start out with. Solid roster. Easy conference.

I just did this, actually.
started with Army as a OC, went 7-5, got hired by UMass as a HC after 1 year, went 19-6 in two years there, moved up to 'Cuse, who are a 4 star team now.
it's fun, but once you max out your recruiting tree, it becomes pretty easy. i got the #7 class in the nation year 2 at UMass.Comment

I started with UAB as the OC. They have a sophomore(rs) QB and RB duo that can lead your team for 3 years. The O-line is a mess so run short passes or risk sacks. The D will give up points but is young as well.
I play on varsity/varsity with all user sliders reduced 30 points except QBA at 0 and Pass Coverage at 100. The CPU sliders all got a 15 point increase expect QBA at 20, Pass Covg at 100, and INT at 40. I play on normal speed with threshold at 60. I feel like you could edit this set to a point that fits your style of play.

I started at WYO as OC (i think they were a 2* tho, not 1 if you are only looking for 1*). After 1 season and a bowl win, i jumped to HC at EMU (1*). Won 10 games in season 2 @ EMU. Season 3, i started by losing the opener at the big house in a nail biter but ran the table after that on the way to a Sugar Bowl birth vs MIA (i got waxed). Had a 5* offer from Auburn (they went 1-11) after that, but i passed and took 4* Zona instead (i went to Bama and bleed crimson. I could not bring myself to take that job... lol)Comment

Started as the OC at 2* Maryland. Two good QBs and a RB that will lead for a couple of years. Went 10-3 my first year, won the ACC Coastal division with a tiebreaker and beat UNC for the ACC title by a field goal. Beat Michigan State in the Orange Bowl (lost to MSU in the third game of the year). Ended the season ranked #15. Never got any coaching offers after the season.
Marylands got a couple different uni combos too.Make #FranchiseNation great again!
