Players are all locked in to their positions? Why can't I sub or switch them out? Is it because I chose a legend? Not coach mode?

If you chose a player to play then no you can't edit the depth chart. Only the coach/owner can.

Strangely, during a game you're allowed, just can't between games. That doesn't make sense to me. Oh well. Least I can in-game. I just have to change the rosters each game, a bit annoying.

Well, you're a player, so technically you shouldn't be able to change depth charts.
