I'm not getting the demo due to the fact I'm actually getting the game so there's no point but for the people that are, this is a lot to try out. I really think EA wanted to put a lot into the demo to try and convince people that might not have considered getting the game. That's probably why they haven't shown much gameplay, they're heavily relying on their demo to win buyers over.
