Ny friend and I like to take lower teams and try to build them up. We noticed about 4 years into it teams let a lot of players go and seems a little unrealistic. The biggest one to me is the cowboys letting Sean lee, Tyron smith, DeMarco Murray, Morris Claiborne, dez Bryant, and Bruce carter all go as well as the broncos letting demaryius Thomas go as well. I know the cowboys have cap trouble would turning salary cap off fix these issues does anyone know?

If there was a new coach signed, who ran different schemes then the previous coach, those players may not be rated as high to the cpu than they were in the previous scheme. Also, if there are up-and-coming, younger players, this may be a reason for them being released as well. Then they, as you said, could've been let go due to the cap.
