You are assuming, incorrectly, that the apparent "ease" of the catch relates to whether or not the ball is caught. A DB with no WR near him with X awareness and Y catch rating vs a QB with Z throw accuracy etc will catch a ball _____number of times. In the hands, via super jump, etc isn't relevant to the mathematical equation. If a WR is close enough then his catch rating will factor in.....or it's a one handed catch (spectacular catch) then that is another variable. But to assume that Champ Bailey standing still with no one around would catch 10/10 passes that were lobbed to him is incorrect.
EA doesn't do situational football. It's straight math based on hard numbers with possibly/likely a small random variable tossed in for "realism" and "dynamic" play.
Otherwise, half the league's QB's would have 40-50+ picks per year.
