It's simple: the animations have to be re-capped by actual football players and not whoever the hell made the current animations. Until they take the time/resources to do this it will be the same. All the games with great animations come from great motion capture. Why do they look so real? Because they had real, talented people doing it.

Create new animations, replace old animations.
