Does anyone have up to date rosters for Football Mogul 2012 that they would be willing to share, or a program that would let me edit the rosters instead of going through the players one by one and changing their ages and all that good stuff?

Football Mogul should have real players for the year it was made.

I don't think 2014-2015 is out yet, but you can have 2013-2014 players in the most recent version.

Football Mogul 2012 has real players just for the 2011 season (or any year prior to that). It is pretty fun text sim, the only problem is the draft classes are usually weak and the trade system can make you shake your head in disbelief sometimes (like when you try to trade #1 overall pick and get one 3rd round pick as an offer)

You may want to give Front Office Football a shot. I have not played the current version, but I really like the last one. Current rosters don't interest me at all - once I am a few years into my new universe, the current NFL players are dwindling anyway.
