I think the trick is to make sure that they are turned off in each mode. When you go back into the options to turn the tracks on or off, you have to hit one of the bumpers to bring up an extended option that shows all the modes. You have to go to each one and turn the track off in each mode. And some tracks are for some reasons disabled in certain modes.
