It would be great for you to post these rosters online. I'm assuming your on ps4. So far, I have changed all the defensive players tackle & jumping rating to 0. Also, I made the adjustments to the QB's like you did except changing the awareness. My final change was to the O LINE. I put all there awareness ratings up to 99. I have started a CFM and I'm seeing that there are some motion shifting with some of the linemen. As for defense I'm not seeing the same crisp tackles that I've seen in play now. Hopefully when your fully done I can make the proper adjustments and get a better experience with Madden 15. I took me 4 days to make all these adjustments to the ratings.
