I asked this question of a developer a few months ago, because I was having this very same issue with my fits, and I was told that while there are gaps assignments programmed into the play data, there is no true concept, yet, of true "run fits", or "force", or "cutback" defenders. The depth just isn't quite there yet. That's why you see the safety standing there even though he should have keyed run and reacted to it a beat earlier.

I noticed in the first video you were working from a 3-4. I imagine the reason it looked better there was because the 3-4 was tweaked this year to align the outside backers a little wider so that outside runs were better contained. In the 4-3, still, you'll see the strong side defensive end, more times than not, lined up almost heads up on a tight end. And with no true concept of 2 gapping, it becomes a dice roll how well he'll set the edge. You almost have to find a 3-4 style of end with a high BSH rating to put in that spot to set the edge.
