Walk ons question
So theoretically, let's say I have a team of all seniors and no underclass men. They all graduate and the next season I only have the 20-25 scholarship guys that I was able to sign. Would the game fill out my team with walk ons? Or would I break the game and have a roster of only 25 players?Check out my dynasty thread:

The game would add walk-ons to get you to the minimum required at each position, and would add enough walk-ons to get you up to 70 on the roster. -

That'd be a hell of a team to start with, if you wanted a rebuilding challenge! Simulate the first season, then cut everyone. Start with walk-ons.Comment

I thought the game couldn't let you cut everyone. I thought they only allowed you cut until you have the minimum amounts at each positionComment

Each position has a set minimum amount so you could not cut everyone.
If you had a scenario like the OP stated then here is what I think will happen (based on my own experiences).
If you didn't try to recruit any players, see the dynasty thread I started as evidence, then the computer would add walk-ons to fill minimum position requirements. You could also trigger some of those recruits that sign, even with all assistance set to "off", on national signing day due to playing opportunity without offering them or using any recruiting time on them. I view those players as kids that dream of playing at my school or "Grey Shirt" players. A "Grey Shirt" is something schools use to get a recruit when they are out of scholarships for that year but will have one open within a year.
Depending on the team you choose you will also create an opportunity to gain transfers. With the number of seniors leaving and the lack of players coming in then you might attract those off season transfers. This does not mean they are going flock to your school. I have noticed that certain schools are hot beds for transfers. Schools like USA, ODU, Army, Navy, Texas St, and a few others seem to always get transfers each season in the dynasties I have played beyond the 4th season.Relax, it's just a video game!Comment

I was looking for a way to start with a terrible team without manually editing down every player. I knew you could only cut so many, which is what made me think of trying this.
Going to make a created school and act as if they're starting a new football program, which IRL would be filled with a couple scholarship guys, transfers, and then whoever else from open tryouts correct? This should allow me to simulate that pretty closelyCheck out my dynasty thread:

I didn't think about using teambuilder -- I don't know if there's something built in the system that would prevent you from making the team all (or nearly all) seniors, but I kind of doubt it. I'm betting jbrew is right -- you'll probably have several transfer requests in the offseason. You don't have to take any of them, though, and could see how things play out with your 25 signees and all the walkons. If you give that a try, let us know how it works out.Comment

You can cut every single player from your team by just changing them all to Kickers, then when you get to cut players cut all the kickers except the real kicker. I have done this many times when starting a dynasty. Sim first season, change all players to kickers, cut them.Comment

I used a created school with a cupcake base roster, and edited all the players to seniors. I set my recruiting preferences (but not the actual board) and simmed the entire season going 0-12 and getting fired
the AI managed to grab the #33 overall class with 23 3* players and 1 *2 player.
I also had quite a few "phantom recruits" show up on my team. They are all redshirt seniors, I'll post their overalls in green.
The breakdown by position is as follows, with the blue players being the scholarship players. I did get one transfer in the off season, Troy Flutie from BC who comes in at a 72 overall as a redshirt freshman.
