No they don't. Just take a look at the millions, not mere hundreds or thousands, but MILLIONS of subscribers and commenters on Madden YouTube channels where the video maker is cheesing and glossing over ridiculous occurrences of total arcade-like football during the video. Then read the commenters exchanging cheese notes and cheering on cheese plays.
That^^ represents the majority of the Madden fanbase, and people who vehemently demand sim are looked at by these fans as total nutcases who nitpick and need to get lives. Personally, I don't care what they think of me, call me a nutcase, but I simply want what's being advertised.

Sim football has always been about simulating the real-life game of football to the fullest extent that talent and technology will allow. I don't buy the personal preference aspect on that, it just sounds like the sort of excuse language they often use. Sim in this context is not a complicated thing to define, but it is complicated to produce.
All that matters is what they produce. So far, they haven't produced that, and they're not going to this year either. I'll bet my house on it. I realize the problem is much bigger than it seems on the outside, but as a consumer it's not our job to care about that. They've had more than enough time and they've made A LOT of irresponsible choices over the years that brought us to this point.
