I think its the way people play. What you dont see in gameplay is a defenseman going back behind his net, waiting for the line to change. A dman will wait a full 4-5 secs before coming out to outlet the pass up the ice. In the videogame, you will get a rogue skater spamming you for the puck, when in fact he should be getting off the ice. In the game you have goalies spitting the puck out in situations where its completely inadvisable. The goalie needs to ice the puck, and get the face-off. Not keep the play alive, which usually results in a offensive breakout. You see teams in real life cycle the puck and take shots that dont hit the net.
