If I recall correctly the elbow that you see around :25 on this video https://www.youtube.com/watch?v=s2W_LhGVZNk

and the Jon Jones spinning back elbow were the only elbows in the game.

Thats the elbow. I'm not sure if they added more. I'm going to make it a point to look harder at the striking additions at the next event.

There is one with the lead hand and another with the rear hand like that. Hendricks, Lawler, Condit (i think Rampage) have it.

does the striking 'feel' different or is it mostly the same?

I think they need to add more getting hit animations- in the elbow video you look at the flying knee landing and it ruins the suspension of disbelief because of how inept it seems if that makes sense.

Its stronger. The blows have more power to them. I hated in UFC 1 that you could practically walk through head kicks. That wasnt the case in the build I played. They are still tweaking striking so it may be improved even more.

The striking control scheme is actually about as simple as I think you could make it while still letting the player control what they do.
The major difference was the crazy amount of modifiers EA included for strikes. If they can cut those back it will be a lot better.

I really can't agree with that. I don't know which modifier you'd remove that wouldn't take some level of control out of the players hands.

I'm hoping that CAFs can be utilized within career mode as random opponents? If I recall correctly, a few of the Fight Nights had that option. After you completed a career mode with your CAF you could drop them into your next career and they would randomly populate in the career "world" as opponents that you might run into or might not.

I hope the retail version will be similar to the build you played.
When I went out to test FN Round 4, the jabs and power shots had a lot of weight to them.
You could keep a guy at bay with a good jab.
                      Same with crosses.
There was a lot of strategy involved trying to get inside on a taller, stronger fighter because you would get rocked if you got hit clean with a cross.

Then the retail version came out and the crosses and jabs were akin to a kitten pawing gently at your face.

Re: EA Sports UFC 2 Features Revealed

I'd really like to see punches where my fighter doesn't lunge in. If I throw a jab and I'm not pressing the left stick toward my opponent, I want to stay at home and work from the outside. Same thing with the rest of the strikes. I also REALLY REALLY REALLY want to have a straight/cross that actually does some serious damage. Look at the Rousey Holm fight to see how Holly absolutely lit Ronda up with her straight left (she's a southpaw, otherwise it would be a straight right).

Basically, I want to be rewarded for fighting smart and picking my spots.

It was the same with me, when I went test Fight Night Champions. The build we played had excellent stamina, poor accuracy of strikes so not everything was landed clean, and the power gave you a fear of just letting the hands fly recklessly. I report on how great it felt and looked, then retail hits and its a arcade version of what we played.
