Truly the only way to answer that for you is to play with both of them and see which feels best to you. I think we've shown in this thread it's possible to get good games and stats on both. I would say keep in mind that Tyler was hooked on All-Madden and after trying both he's sticking with All-Pro.
Here's what I would do if I were you. Start you a CFM, play the first season on All-Pro. Then if you didn't get the challenge you wanted or it doesn't feel quite right to you, give season 2 a go on All-Madden. If it did feel good to you (like this first year did for me) then just stay on All-Pro and carry on...
