I think for new careers, you can change it for clubs in a particular league where you intend to start a career. While starting the career, you'd just need to choose current customized squads.
For current careers, you can do it before the game using the 2nd controller.
I had a look at a few numbers on Sofifa and I will be bumping the Aggression up by around 13% for my opponents.
