From what I remember, you cannot edit anything but RBI does a good job of updating the rosters and adding new players every week. You can then import their rosters into an ongoing franchise.

Like how you can see flight of the ball after contact in fielding camera. MLB the show needs to have this. They only have it in hitting camera
