Are the rosters updated by position? When I play online against someone, it seems like the players names are wrong by position?

That's because the rosters when you try to play online revert to their original form but keep the name from the updated roster. So if you're playing with Georgia, for instance, your running back will be #3 (Todd Gurley) but the name of that player will be whatever name that particular character has in the present day roster.

I believe online dynasties are able to function with the updated rosters and as long as you don't create a new character and just edit or use an existing one, RTG will do the same.

I also get crashes on load up screen for all later RPCS3 versions I've tried so I'm still using the older AUG 26 build. (rpcs3-v0.0.11-10779-bccfb1cd_win64). Not sure if it's due to my particular PC CPU/GPU configurations. I only have 2 PCs that can play RPCS3, so this is the best I can do.
-Not perfect but playable at 25-60FPS with some choppy audio, but smooth video gameplay.

appstate is right.

There are no plans to do so. I believe we would have to be locked into the number of players at each position that the base files had (example: if the base file has 5 QBs on a team, we would be forced to have 5 QBs on that team). Plus we would basically redo the entire roster. The loss of flexibility is not worth it and non-Dynasty online games are pretty rare nowadays.
