What are some of the best dynasties you've seen on youtube for NCAA? I know Mr Hurricane is one. Any others?

Try LilShef and The11Italian. They have an ongoing dynasty right now they do with their subscribers. I really enjoy their vids. They also play stuff like madden.

It may not be ongoing, but there's a guy called TheUofCWildcat that has a cool custom conference dynasty where he's made "tiers" with his conferences, if you wanna see how that works.

I'll have to go with the only one I've been watching, it is a NCAA Football 06 dynasty by MilesDawkins247. He manages to make it entertaining and he has stayed with it longer than I would have expected, he's into his 2017 season as of his last video. He also just started up one for NCAA 14 as well.

I have enjoyed Coach Duggs (Katz Barstool Sports). He is funny because he isn't the best at the game. Very entertaining.
Mr. Hurricane Kalispell and Minnesota dynasties.

I'm about to try my hand at it. I'm doing mine on Twitch and it'll be Coach Mode with me controlling Georgia Southern. Every game will be played out on the field...and I'll have game highlights, player spotlights and Storylines. I'm not a pro with editing or anything but I'm gonna give it a try. All Week 1 games have been played. So, I'm in the process of getting everything together.
