Randomness in man coverage

Does anyone feel that there is a high range of randomness when going against man coverage this year? On the same play and same route, sometimes the DB is comfortably beat and it's an easy throw. Other times, they'll play tight coverage and at the last second will just leap in front and pick off the pass even though I pass lead it away from him?

We're talking one on one coverage here against a normal DB with no special abilities. While I shouldn't expect to complete 100% of these passes, I've thrown way too many INTs on this exact type of scenario. It's frustrating because against man coverage, you pick the matchup you like and go there, I don't have time to come off and throw to someone else. The worst case scenario should just be an incomplete pass that the defender managed to knock away.
