Go to Advanced Settings as you play your game to change playbooks, once changed it should save for future games.
Unfortunately under Schemes you can only choose from one of the 32 NFL coach's playbooks, not custom or playbooks like WestCoast etc.
Because of this, you cannot seem to use Formation Subs for any custom playbooks.
