Let me start by saying that some of the footage you saw in the background of the E3 videos are from a build that is about 1.5 weeks old. You may have seen some bugs etc. but rest assured that we still have about 3 weeks left to fine tune.

Rammer:
The real time physics engine effects all aspects of gameplay not just hits so for goalies what this means is that the puck will bounce differently off the goalies chest protector compared to his pads. You'll notice the puck much more lively off the goalies pads. You'll also see the goalie directing a lot more shots to the corner or sweeping the puck aside to keep the play alive.

absolutely...moving to physics based gameplay allows for open ended situations where anything can happen. Last week we had a goal where the puck hit a broken stick lying on the ice then deflected over the goalie's shoulder.

Rammer:
At e3, we were playing on the default skill level where we want to see more big hits. For online play and the higher skill levels, you will see authentic hits (ie. kane will never knock pronger over). in the E3 build there was still a chance of guys like Sedin and Kane knocking guys over. This will definitely be toned down even for default when we ship.

Will the slapshots from the point behave more, randomly i guess? I felt the 2K series captured this better than EA's has and with NHL 08-10 it just felt a bit predictable and "pre determined". So will the puck fly around more is what I'm asking?

Sticks will break on shots, blocking shots, dropped from hits, can break from stick lifts and slashes. Broken sticks or sticks on the ice will affect the puck and players will be able to kick them out of the way.

because physics is driving hits, every check is different. the feel of hitting has really changed because now you can drive a guy backwards three or four feet then have him hit the boards and react again with physics.

It's something we talked about at length but at the end of the day we decided that keeping the flow of the game (esp. for OTP) was more important than letting people get kicked out of the circle. the other thing we talked about was that for players not as familiar with the intricacies of faceoffs, it may be confusing to them why they're getting kicked out.

When I play online, I seem to always run into players that like to drop to the ice as a means of playing defense. we wanted to give users a counter to that and after seeing richard zednik score that amazing goal where he jumped over a player, we decided to add that as a counter

this year after you score, you have a small window to trigger a celebrations. We have some that are mapped to the facebuttons and you can ride the stick by holding LT and still control your free arm with the RS. You can also go down to one knee with the RT and control your free arm with the RS.

Another year, Another edition of the game sans custom goal horns ... sigh.

I can only hope they can nail enough of the horns in the game this year to where it won't be like 10 where almost 2/3rd's of the horns in the game are inaccurate.
