So I am looking at taking over the Packers or Jets, if I go Packers I want to make Adam Gase or McCarthy for the Jets.

How do I do this with coaches that are already in the game? Do I retire that coach or ask for a release and take over the new team?

Any help would be greatly appreciated.

You can be the owner of the Dolphins and Packers.
Fire both coaches (in the staff screen) then hire the replacement coach that you want. Then fully retire as the Dolphins owner.

And if you want to be the coach of the Packers retire as the owner and continue as the coach.

My guess would be it will only work for offline. Unless you have a friend or a 2nd profile to use.
