EA UFC franchise suffers from its lack of identity.
Trying to please both beginners and skilled players on exactly game mode is just impossible. You can't on one side have the "spam buttons" clinch , and on the other side have "the carefully flick your left stick so that you don't get taken down" system. Really, you can't please them both simultaneously. Make the default game mode arcadey as much as you want so that beginners enjoy it. But atleast make a simulation mode for skilled, or players who want to learn about the game more. That mode should also be the default in ranked. You can't really expand on an arcadey game. You either make it more simple and let the franchise go backwards or you implement new mechanics upon the arcadey and again make it more complex , especially for the new game's beginners. And to be honest, can beginners really play the game as it is? Even with the easy ground game controls , beginners won't be able to play because the ground game wasn't meant to be played this way. You just have both sides trying to transition because neither knows how to defend them. Even subs, beginners don't know how to defend them, they will just spam the left analog making it actually worse because they don't know how they work even tho the system was downgraded so that they can play.
Both groups suffer right now because fans don't have the game they want, and beginners can't really play it because the game requires some basic knowledge to actually play it as it is right now.
So all in all, make the default game mode arcadey: Generous stamina , wacky combos , simple clinch , simple takedowns , simple submissions. But make a "skilled" game mode where stamina requires good management, clinch actually has mechanics , takedowns require you to balance your fighter, submissions let you gradually build your escape.
