I never bought the 2K15 version, so I'm a bit behind the curve for 2K16. What is the easiest way to get out of submissions and kicking out of pins?

Submissions, you run away from the other bar. Hit the dot if you can when it comes up. For pins you just have to stop the bar wheel in the right spot. It gets smaller the more damage you take. You have 3 chances. After a finisher you miss out on the 1 count and only have 2 chances.
