Someone on the forums discovered that the Novice "steering assist" setting would reduce a lot of the so called sliding feeling.

I tinkered with this and came up with some revised settings.

Xbox 360 controller, running from 3rd person (behind car) view.

Steering Deadzone - 3%
Steering Sensitivity - 57%
Throttle Deadzone - 6%
Throttle Sensitivity - 77%
Brake Deadzone - 6%
Brake Sensitivity - 77%
Speed Sensitivity - 27%

Assist options on Novice
Steering Assist - ON

I have my steering sensitivity set to 57 and my speed sensitivity at 27. Different from my previous config but with steering assist it felt like there was too much lag in the response. 57/27 seems to be a nice mix.

By using the steering assist the cars feel much 'calmer' yet still force you to modulate the throttle / brake to some degree. Although it is almost impossible to whip the tail around by overpowering out of a flat corner you can suffer some wheel spin. Something I found harder to come by using my original config from part one.

However, the downside to this config is a pretty big hurdle to overcome for most self respecting 'racers'. In addition to correcting your input (which keeps the sliding in corners down) the steering assist also guides you toward the racing line. On one of the speed challenges at Silverstone I could literally drive straight past the corner and the game would steer my car back into the turn. Granted, it was not so sever it drove the car for me but still very noticeable.

As I said earlier, unless the devs patch this game and bring the slip point into a more normal range, it will never be on the level of a sim. So the question for me now is, do I go with a config that feels remarkable well but heavily assisted or do I stay more in control of things but put up with serviceable handling. I think I have to go with what is more fun and based on how the AI handle and react in this game I am going with the more 'arcade' approach. My ego will have to deal with the fact the game is driving for me to some degree.
