Will the game ever allow me to start a franchise in the current week or is Wild Card the furthest it will go?

As of today, the Wild Card is the closest starting point. You can start there and force W/L the schedule to make it accurate

Go to league schedule, select the game, and there should be an option called "Force Win" or something similar

This is my first year doing online franchise. Can you control more then 1 coach? I got to offseason, and one of the coaches hired is running a 3-4 with a 4-3 playbook. I would like to go edit his scheme to make them align. In offline I can create character, be that coach, edit his scheme and then retire without leaving my main team. Can I do something like that with online?

Find your favorite iterations and play it forever. Card games are whats "now" and games will cater in that direction and forget realism. Just have fun and play :)
