I'm playing as a "superstar" in one of my CFM. I made myself a qb for the Titans (pre-draft roster, no Mariota) I'm currently 3-8 even though I'm 3rd in the league in passing yards and 6th in QBR. My defense is horrendous and we keep losing. Will the coach get fired and replaced by a new one?

Yeah they can be fired.

Hell I got fired as a coach in M15 after going 11-5. The game thought I went 3-13 after I had to rejoin the online CFM.
