What's your favorite team to play an offline CFM with and why?

I like playing with bad teams in CFM because it's fun rebuilding them. Currently working on a 49ers CFM. Went 12-4 the first season, but lost in the first round of the playoffs to Seattle.

So I'm historically the guy who takes one of the worst 3 teams, blows it up, accumulates a ton of draft picks and then wins the SB that was in about years 4+. This year however I've gone a different path. I've taken a middle of the pack roster and try to balance winning and rebuilding at the same time. I chose the Bears who have some pieces to build around but also not enough to win the Super Bowl out of the gate.

Throw in a few house rules and it's been a great dynasty thus far.

Other teams I considered:

Buffalo Bills
Atlanta Falcons (preseason roster)
Houston Texans

I look to see which actual teams hired new head coaches this season to make my choices a bit more historical.

The Bears do seem like a great middle of the road team to play with. I like the history that is there.... should be fun to try to bring them back to the glory days

I think the Jags are a good team to start off with. Some interesting pieces at WR and the defense has young talent. Just need to work on that OL.

I find much more of a challenge to keep a good team good than to rebuild a bad team. The easy accumulation of draft picks makes it easy. Keeping a winning team winning and under the salary cap is much harder especially now that they toned down the draft classes and your not guaranteed great players with late picks. If you refrain from trading good players for high draft picks it can be a challenge. If you want to rebuild through the draft turning off salary cap will keep great players from hitting the market and will result in more of a cradle to the grave exerience for most good players with one team.
