Curious as to what is the actual benefit of changing a players position versus just playing them out of position for a game or two? A couple of leagues I am in seem to have a number of owners that will change players positions frequently based upon injuries or need.

Unknown. The general consensus (I think) is if that change is going to be a permanent one, it's better to take the immediate hit of ratings and start building up experience at the new position. If it's a one-game thing, then just play them out of position.
That said, the one obvious benefit is meeting position requirements (which is often done in FB/TE swaps).

Sometimes players coming out of the draft are not at their most experienced positions. It's rare, but I find it not all that uncommon especially around the TE/FB positions to get an experience jump by changing.
My current gripe is a NT I drafted with the intention of changing him to DT to eventually replace one of my two stud DTs. After three years of not having the option of changing to DT I traded him in a fit of pique (for a stud CB). He promptly changed to LDT and had a breakout year. I am still fuming.

Did you do weight training on him to get his weight correct?
