What is a "Stiff Neck" Individual?

My wife was recently in a conversation with a person, and she had noted that she was married to a jewish person (me). The person said that jewish people are known to be "Stiff Necks". What does that mean?

Ok, I wasn't sure what Stiff neck meant since I have never heard the term to describe anything besides exactly what it says literally.
