All I'm trying to say is that it's difficult enough to find good Mexican food here in the US, hell, here in Texas. I've had "Mexican food" in Germany, and it was awful. I just wonder what passes for Mexican food over in Japan...

I think it's hilarious when people say "If Italian food is made by a Mexican, then it's not real Italian food".
It's purely circumstancial. What about these super high-end restaurants? In Yountville, there's this place called the French Laundry. Thomas Keller is the head chef. You think his ethnic background has any influence on how he cooks? If you know what tastes good, you can cook. My mom makes some good enchiladas, and she's Norweigan. And I live in a part of town that's 50% Mexican, with an "authentic" Mexican restaurant on every corner. I've eaten lengua, cezcos, cabezas, and all the other "authentic" meats and dishes that are offered at true Mexican joints. I've gone to true Chinese places and chewed on sheep intestines until my jaw was sore. I've been to sushi places in japantown here in San Jose that have a Mexican on the line. These restaurants don't hire people based on their ethnicity. They hire them based on their ability to make quality food and handle the pressure of being in a restaurant kitchen.
