For me, it's because it was a little after 5pm and we had 20+ people over for a Lowcountry boil last night, I needed to start boiling the water and chopping up onions and sausage, and knew I wouldn't be very available, so I just turned off the feed and was gone from OT until mid-morning. *shurg*

Low Country Boil
Shrimp, Andoille Sausage, Corn, Potatos, Old Bay Seasoning, sliced whole lemons, and chef's special spices. Some will add crab meat or (my choice) crawdads, and some will sub kielbasa for Andouille Sausage. Some will even share a recipe...but not "theirs" its a traditional as old as good southern Q. It may be possible to use too much cayenne and red pepper but I have not yet figured out how. We make ours in a 30 QT pot similar but larger than something you would deep fry a turkey in. Usually start with 20lbs of fresh shrimp. and 5 lbs of mudbugs/crawdad/crayfish We do a low country boil tailgate every year and its always a hit. This year its looking like 200lbs of shrimp because of size. I add okra to mine because I like okra. I am also now hungry and unproductive thanks to this thread. One of my favorite local observations is this. All the tourist traps and made for TV crap will tell you shrimp and grits is the traditional low country delicacy. The two true low country dishes, in my opinion are low country boil and chicken bog. |
