Loved the original and the remake, XCOM 2 will be one of the very few day 1 buys I do anymore.

I enjoyed the remake and finished it and its expansion in normal mode.

I wanted more randomness and different ways to win. The final battle was eh. I've had little desire to play it again.

After a long layoff, I started playing XCOM Enemy Within on my iPad on the train last spring. Depending on the time of year, that gives me 2-3 hours a week where I can play. First play through I got my ass handed to me on normal. I started again, and this time I sailed through to the win on normal. About 20% through, it became fairly easy to win missions and only rarely lose someone. Recommendations for which options to use when I bump the difficulty up a level in the 2nd wave?

I play WOTC. Sometimes relatively vanilla and other times with gameplay changing mods, so can't really help you on Enemy Unknown.

What I can say is I typically play on "Regular" difficulty and that's pretty enjoyable for me. The next level is "Commander" and it is more challenging because enemies get more hitpoints and there's more of them. I don't think I've ever beaten it on Commander as my team just gets beat up and I say frak it.

So, if you're done with Regular, start playing the next level up Commander and see how it goes.

So far, on Classic difficulty, I’m averaging one casualty per mission through 3 missions. I’m using Not Created Equally, Hidden Potential, Save Scum, Absolutely Critical, and Aiming Angles. Much harder so far. Rookies Kodos and Jeff Nights are already dead, and Godzilla Blitz and C.T. Homer are gravely wounded.

Casualty as in wounded is okay.

Casualty as in KIA ... one per mission is probably not sustainable

My squad probably thinks I'm on the aliens' side. It's gonna be over soon for me on this run. It's much more unforgiving than on normal. It's reputation on Classic difficulty seems well earned. It seems like aliens hit on reaction shots much more often and for more damage. I've lost my entire squad twice, and nobody ever gets to build up much before dying.
