iPod help

So I bought some speakers for my iPod. Is there any way to get a selection of my songs to play in shuffle mode? Not everything on the list, just a certain subset -- i.e. create a list for hanging out with friends that doesn't have the gangster rap and/or broadway musicals?

I tried creating a playlist, but I can't seem to get that to play in shuffle mode. I tried "unchecking" some songs in iTunes but that doesn't seem to do anything.

Is my only option to just delete/re-add songs as I go?

I thought there was a global setting for shuffle that you turn on or off? I haven't used mine in a bit, but I think I remember having my playlists random...
