You put the arrow in the glove because that's where the catcher want the ball to end up. Don't understand your second question...

YOU see how every pitch that breaks has three arrows. which of the arrows go in the glove?

I'm not sure that's entirely predictable. From what I perceive, the more arrows you see indicates a sharper break on the pitch.

2-seamers, cutters.. they'll probably finish just a bit further than the arrows are pointing. Curveballs and sliders generally finish notably further than the arrows.

The arrows are just showing you the direction of your pitch break, but don't necessarily hone in on where they'll finish. You should have a good idea of where they'll finish after throwing a few with a particular pitcher, though.

For simplicity sake just put the last arrow in the general area of the glove. No catcher is going to set up where he wants the pitch to break.
