Question on AI difficulty

I have a question about the difficulty levels in this game. I can't seem to find where I simply play on All-Star or Hall of Fame across the board. I see where I can put it there for different places like hitting and pitching. Is that an option?

What controls the AI difficulty? If I put human hitting on HOF, does that make the AI pitchers and fielders better or does it just make it harder to hit the ball?

The game plays pretty decent for me right out of the box, so I am not sure if I even want to touch sliders, but I might just want to play default All Star or HOF but I can't seem to find a place to just say, I am playing All-Star level across the board.

The difficulty is split, there is no global difficulty. So if you want to play All-Star globally, you'll have to set hitting/pitching/fielding all to All-Star.

From what I understand, the more you raise the difficulty the harder it gets and the smarter the AI gets. If you put hitting on HOF, your PCI will be smaller than if it was on Veteran, but the AI is also quicker to pick up on your tendencies. It will notice quicker if you're not patient at the plate and will throw more pitches off the plate to take advantage of that.
