EDIT: Also, I thought that in my last season I offered a player arbitration and he still became a free agent. That's why I think I'm panicking.
Even if you offer a player arbitration you need to make sure you tender them a contract. They are two different things. You can negotiate a contract with a player with out offering arbitration but after the arbitration deadline he becomes a free agent. Same thing if you offer arbitration but don't offer the player a contract at the contract deadline that player will be a free agent because he was non tendered.

I thought if you offered them arbitration they will have a date in Feb to decide the salary?

There is, but you also have to continue normal contract negotiations. The arbitration hearing isn't a negotiation, it's where a 3rd party decides the player's salary.

Ok, but once you offer arbitration you won't lose them for that year, correct?

As long as you have some kind of normal contract offered to them, you will not lose them.

In case this hasn't been mentioned yet, if you go to League > Transactions > Handbook in franchise, you can read up on every aspect of the off-season.

The Qualified rule states a team that signs a Qualified FA, they will forfeit their 1st round pick. If their 1st round pick falls in the top 10, the team gets to keep their 1st round pick and the forfeit their 2nd pick instead.

I used the Handbook to teach me everything about the offseason. Some stuff was still trial and error, but that Handbook did wonders in helping me understand everything.
