During a game, if you go into STATS, then Game Log, it will show what level you are on and and the progress.

It will show hitting when you're up to bat and pitching when your on the mound.

I wish you could see where you are at level wise somewhere inside franchise mode.

So do I delete the saved data to get that option again? Or delete the game? Would I lose my franchise saves?

Make a new profile or edit the “casual” one to your liking, then set it as default. It will start at whatever difficulty you chose when you first installed the game. If that doesn’t work for you, I believe if you just delete the game itself, and reinstall, it will boot up with the options you got at the very beginning. If you delete saved data you will lose all of your franchise saves, sliders, rosters, etc.
