    Do ratings override sliders..?

Which takes precedence in gameplay sliders or ratings?

Sliders override (for lack of a better word) ratings. It couldn't be the other way around. If it was, there would be no reason for sliders to exist.

Well ratings still are what rule the day.

Sliders just change the scale globally. So if you turn down Fielder Arm Strength for example, the stronger armed fielders will still throw faster than the weaker ones. The difference is that overall everybody will have weaker arms proportionally to each other.

      I hope that makes sense.

Or maybe what adjusting the sliders do is proportionally increase or decrease the players ability in the area you have changed. For example an poor power hitter if you boosted power would not overtake an outstanding power hitter. They would both see a porportional increase in power.

Not true. See my previous post.

Sliders aren't absolute. They don't override the ratings, they just tune them evenly together.

If you put Power to 0, that doesn't mean nobody will be able to hit homeruns. The power hitters would still be power hitters in respect to other hitters because their power ratings are generally higher than the rest of the field, it will just be tougher overall.

Besides, I think the Devs have stated multiple times that the difference between the -5 and +5 scale in the sliders isn't that extreme.

Right, look at it like this.
If someone is rated lets say 80 and another is rated 50 in the same category, if you were to up a slider that affected that stat by lets say 5, then the 80 would be 85 and the 50 would be 55.
