most of them come with readme files to tell you how to install, but for mods such as the unis, facepacks, portraits, you would use the installer thingy( yes that is what it is called) stadiums you just copy and paste, datafile copy and paste. You should download the mvp 08 mod and run the installer.

I no longer have the CD case that the game came in.

Actually, if by slim chance you still have the registry file undeleted, it is in local machine/software/electronic arts/ea sports/mvp baseball 2005/ergc folder ... or I guess you can search your registry for "ergc".
