Probably because it's the most realistic playing baseball game out there. Some people want all the flash and glitz that other games have, but don't worry about the gameplay. Most hardcore HH'ers want the best playing game and aren't as concerned about the graphics/flashy lights etc...

I actually thought HH2K4 looked decent. Much better than years past. Add that with an incredible gameplay engine and it kept my interest. I played all the other games, but eventually got bored with them. HH was the only one I could complete a 162 game season.

Just my take though. I'd take a good playing game over one that looks great anyday.

I don't think it's for sure yet, but I definately wouldn't bet against that. Rumor now is that HH2K5 WON'T be released. Reason is that Microsoft won't have time to develop the game that quickly. All just rumors though..
