You only have two options.
1) Turn "GM All Teams" On before you start franchise.
or
2) Edit existing fake minor leaguers who have the same batting side and throwing hand as the player(s) you want to create. You can change the player's age, face, stance, etc. etc. until you have the player you want.
#2 is the only way I was able to make Mauer, Matsui, and a few other non-union guys I wanted to add before franchise play. I honestly don't like having GM All Teams, because it ruins the franchise experience for me.
A tip on doing the above: Every time the game boots up it generates new fake minor leaguers for each team, you can also choose "reset" roster over and over because it generates new fake players every time you do until you have the necessary bat/throw hand and position(s) you want. But it takes a hell of alot of patience, because it took me a long time to get a catcher on the Twins who batted Left and threw Right (Mauer) combined with a no-name SS on the Mets who was a switch-hitting shortstop (Matsui.) They'd also not be usable in exhibition play and would start Spring Training in the minors unless you GM their team.
It shouldn't be so hard.

#2 sounds good, thanks. Another question though, what face/stance should I use for Mauer and Matsui? I know what Matsui like but dont know his stance, and I dont really know what Mauer looks and bats like. Millar I can manage. Got any suggestions?Comment

Beware that if you turn on GM ALL TEAMS, you lose the ability to have the CPU teams trade with each other (from what I understand, the trade AI isn't all that great anyways) and you lose the ability to have injuries in your franchise. Damn poor logic by the programmers if you ask me...Comment

Well I think if you just edit the roster before you begin a franchise...you can then load it and begin a franchise....using the edited roster. If you do it before starting the franchise you can add players to any team, I believe.
