Re: What is the difference between 60 fps and 30 fps?
with a game running in 60fps it moves smoothly. All the transitions and animations will all happen in one fluid motion and there won't be(or shouldn't) be any hiccups or stutters along the way.
Give this post a few minutes and I am sure that someone who is smarter than me(won't take much) can explain it better and in greater detail.
I can't shave with my eyes closed, meaning each day I have to look at myself in the mirror and respect who I see.

Imagine a little cartoon flip book of a ball bouncing. One book has thirty pages, and the other has sixty. The one with sixty will look much smoother as you flip through the pages.

Seriously, though... 60 frames per second is like a fresh breath of air compared to 30 frames per second. You may not realize it until you actually see it, but you'll just notice how much smoother the game feels. There really won't be any "choppiness" while the game is in motion; whether it is in the swing, the pitch, or anything else.
If you have MLB 2K7, you can do a test and see it for yourself. Hit a pop up foul ball that goes out of play, so you can get the cutscene camera angle that gets a shot of the ball from the ground. As the ball is going up and the crowd is in the background, you will notice everything is sort of choppy. Once the ball gets up into the blue air, you will notice a much smoother path along the trajectory that the ball is traveling. It should be very noticeable, actually. Then, as the ball comes back down again, for a split-second you will be able to see the stadium in the background while still running smoothly, and then it will get choppy once again.
Besides, more frames means more hit variety, because now there is a frame between each other frame while the ball is pitched. I don't know if that really makes sense, but if you think about it, you might be able to get it. Control will probably feel a bit more responsive as well.
If you have World Series Baseball 2K3 or ESPN Major League Baseball lying around, play one of those, then play MLB 2K7. Those games ran in 60 FPS. Or try MLB '07: The Show for PS3.

play madden 08 for 360, then for ps3. You can really see the difference. I have it for 360 and then went to a friends and saw it on ps3, which is 30 fps, and it looked bad. There is a huge difference.
