Hit the LB to get a lead off, or the RB to get back towards the base. To actually steal, you hold down the L-Trigger until it rumbles, and then when you want to take off (i.e. during the pitch) you release the trigger. To slide (I believe) use the L-stick, not the R-stick.

Edit: Ok, will still leave up until this gets locked in case anyone else wants to know.
